The brief was to design a high-end, luxury cocktail bar and restaurant concept for Gatwick and London City Airport, inspired by the rich biodiversity of Sussex, Surrey and Kent. The vision was to celebrate the region’s outstanding natural beauty, abundant greenery, and the quality of its fresh, locally sourced produce, translating this into a refined and immersive customer experience.
I collaborated closely with an Interior Designer, Lighting Designer, Chef and Architect to bring the concept to life, ensuring a cohesive vision across spatial design, atmosphere and culinary experience.
